Apple Cider Tarragon Vinaigrette

Ingredients

 ¼ cup tahini
 ¼ cup organic apple cider vinegar
 1 tbsp maple syrup (or date paste, link in directions)
 2 tbsp lemon juice
 1 tsp dijon mustard
 1 medium garlic clove
 1 tbsp tarragon (fresh, finely minced)
 ¼ cup water
 salt (optional to taste)
 ground black pepper (optional to taste)

Directions

Add all ingredients to a mason jar or bowl.

Place the lid on the mason jar and shake well until all of the tahini is dissolved or whisk well in a bowl until all of the tahini is dissolved.

Alternatively, you could place all ingredients in a food processor or high-speed blender and blend until smooth (this is great if you prefer the tarragon and garlic to be blended rather than whole in the dressing).

Pour over top of your favorite salads, steamed vegetables or grain bowls.

Chef's Notes

Substitutions
Instead of garlic clove use ¼ teaspoon of garlic powder.

Instead of tarragon, try marjoram or basil.

Use one teaspoon of dried tarragon in place of fresh.

Instead of maple syrup use date paste.
