Apple Pie Porridge Slow Cooker

Ingredients

 ½ cup organic teff (rinsed well)
 ½ cup organic amaranth (rinsed well)
 2 cups water
 1 cup plant-based milk (unsweetened)
 1 cup organic apple (cored and diced)
 2 tsp ground cinnamon
 ½ tsp ground nutmeg
 2 tbsp maple syrup (or date paste, link in Chef’s Notes
 1 tsp vanilla extract (optional)
 walnuts (chopped, or other topping of choice, to taste)

Directions

Add all ingredients to your slow cooker. Stir well.

Set heat on low and time for 8 hours.

It may be a little clumpy at first after sitting in the slow cooker, but once you stir it well it’ll become nice and creamy!

Serve with walnuts or other toppings of choice.

Chef's Notes

Substitutions
Instead of teff or amaranth, use quinoa or millet. Or use all teff or all amaranth.

Substitute pear for apple.

Top with pecans or almonds instead of walnuts.

Whole Food Sweetener
Use date paste in place of maple syrup.

Nut-free
Top with hemp seeds, pumpkin seeds, or chia seeds instead of walnuts.

Stovetop Directions
Add the teff, amaranth, water, milk, and apples to a medium stovetop pot and heat on medium-high, bringing to a boil. Reduce heat to simmer, cover, and cook for approximately 25 minutes, stirring often, until tender and creamy. Stir in the cinnamon, nutmeg, maple syrup, vanilla (if using), and walnuts.

Storage
Store leftovers in an airtight container in the refrigerator for up to 5 days.
