Blueberry Earl Grey Chia Parfait

Ingredients

Tea
 2 cups water
 2 tsp Earl Grey tea ((or 2 tea bags), or English breakfast tea)
Chia Pudding
 ¼ tsp ground cardamom
 ¼ tsp ground ginger
 ½ tsp ground cinnamon
 ¼ tsp orange zest (optional)
 ½ tsp plant-based milk (plain, unsweetened)
 1 tsp vanilla (extract)
 2 tbsp coconut sugar (or date paste, link in Chef’s Notes (optional))
 1 cup chia seeds
Blueberry Sauce
 2 cups blueberries (frozen, defrosted)
 ¼ cup orange juice
 ¼ tsp orange zest

Directions

To make the tea: Bring water to a boil in a small pot over medium heat. Once boiling, remove from the heat and add a tea infuser or bag. Steep for 10 minutes. If you steep black tea longer than 10 minutes, it will develop a bitter and unpleasant flavor. Cool to room temperature.

Mix the spices, orange zest, plant-based milk, vanilla, and coconut sugar in a large bowl. Add the cooled tea, whisk in the chia seeds, and mix until combined.

Leave the mixture for 15 minutes without stirring for the chia seeds to gel. After 15 minutes, whisk one more time.

Cover the bowl and place it in the refrigerator for 4 hours or overnight.

While the pudding sets, make the Blueberry Sauce. Mash the defrosted berries with a potato masher or a fork in a shallow dish until they break up. Stir in the orange juice and mash some more until all of the berries have released their juice. Fold in the orange zest, and chill until you are ready to assemble the parfaits.

To assemble the parfait: Use four serving bowls, individual-sized ramekins, or parfait glasses and alternate layers of Blueberry Sauce and pudding, ending with the sauce on top.

Chef’s Notes

Substitutions
In place of blueberries, try your favorite berry of choice. The berries can be fresh or frozen.

In place of Earl Grey tea, use your favorite black tea of choice.

Prepare the Earl Grey tea ahead of time.

Whole Food Sweetener
In place of coconut sugar, try date paste.

Storage
