Make the gremolata and set aside.
Steam the broccolini: Heat a large stovetop pan on medium-high heat. Once nice and hot, add the broccolini stems. Stir often and cook for 2–3 minutes. Add 1–2 tablespoons of water as needed to deglaze the pan.
Add the broccolini florets plus ½ cup water. Cover and let steam for 3–5 minutes.
Remove the lid and turn off the heat. Add ½ of the gremolata to the broccolini and drizzle a teaspoon of olive oil over top, if using. Stir to combine.
Add optional salt and pepper, taste, and add more gremolata, if desired.
Divide between plates and add optional crushed red pepper flakes.

Gremolata is an Italian condiment made from finely minced parsley, garlic, and lemon zest. It is traditionally used for dishes or proteins that are considered to be a bit heavy or one-note in flavor. Use this gremolata anywhere you’d like to add a touch of fresh, vibrant, and earthy flavor.
