Ingredients

 1 bunch of organic broccolini (stems chopped into ½” pieces, florets chopped into 1” pieces, separate stems from florets)
 1 batch of Italian Gremolata (link in Chef’s Notes)
 1 tsp extra virgin olive oil (optional)
 ¼ tsp salt (optional)
 ¼ tsp ground black pepper (optional)
 crushed red pepper flakes (optional to taste)

Directions

Make the gremolata and set aside.

Steam the broccolini: Heat a large stovetop pan on medium-high heat. Once nice and hot, add the broccolini stems. Stir often and cook for 2–3 minutes. Add 1–2 tablespoons of water as needed to deglaze the pan.

Add the broccolini florets plus ½ cup water. Cover and let steam for 3–5 minutes.

Remove the lid and turn off the heat. Add ½ of the gremolata to the broccolini and drizzle a teaspoon of olive oil over top, if using. Stir to combine.

Add optional salt and pepper, taste, and add more gremolata, if desired.

Divide between plates and add optional crushed red pepper flakes.

Substitutions
Substitute broccolini with broccoli, cauliflower, or brussels sprouts.

Prepare Ahead
Prep the Italian Gremolata ahead of time and store in an airtight container in the refrigerator for up to 4 days.

What is Broccolini?
Broccolini is a cruciferous vegetable of the Brassicaceae family similar to broccoli, kale, cauliflower, cabbage, and brussels sprouts. Broccolini is very similar to broccoli, but is slightly sweeter in taste, more tender once cooked, and has a smaller and delicate stalk.

What is Gremolata?
Gremolata is an Italian condiment made from finely minced parsley, garlic, and lemon zest. It is traditionally used for dishes or proteins that are considered to be a bit heavy or one-note in flavor. Use this gremolata anywhere you’d like to add a touch of fresh, vibrant, and earthy flavor.

Storage
Store vegan gremolata in an airtight container in the refrigerator for up to 4 days.
