Charoset

Traditional Ashkenazi charoset made of apples, nuts, cinnamon, and wine, used in the Passover seder

Ingredients

 2 medium organic apples (peeled optional, small diced)
 ¼ cup raw walnuts
 ¼ cup raw almonds
 ¼ cup organic raisins (golden or black, unsweetened)
 1 tbsp date paste (or maple syrup)
 2 tbsp organic concord grape juice (unsweetened)
 ¼ tsp ground cinnamon

Directions

Peel, core and dice the apples, add them to a medium-sized bowl and set aside.

Toast the nuts: In a saucepan, on medium-low heat, lightly toast the almonds and walnuts until fragrant, about 5 minutes. Occasionally toss them to prevent the nuts from burning. Remove from the heat and let cool for a few minutes. Once cool to the touch, finely chop the nuts into bite-sized pieces.

Add the nuts, raisins, date paste, organic grape juice, and cinnamon to the apples and stir until well combined.

Cover and let sit for 30 minutes or in the refrigerator overnight before serving.

Substitutions
Substitute walnuts and almonds with your favorite blend of nuts.

Substitute raisins with chopped dates, currents, or your favorite dried fruit of your choice.

Substitute grape juice with tart cherry juice or pomegranate juice.

Nut-Free
Substitute almonds and walnuts with pumpkin seeds, sunflower seeds, or hemp seeds for a nut-free option.

Additional Notes
Charoset is considered to be a sweet relish, and there are many ways to make it. To achieve the consistency and texture you enjoy, you may chop the apples, nuts, and raisins as fine as you’d like. Alternatively, you may shred the apples with a box grater or the grater attachment from a food processor to get a finer and more paste-like texture overall.
If enjoying this recipe during Passover, substitute grape juice with Manischewitz wine or your favorite sweet red wine, if your dietary lifestyle permits.

Storage
Store in an airtight container in the refrigerator for up to 3 days.
