Cozy Baked Apple Slices

Cozy Baked Apples

Ingredients

 4 organic apples, medium (cored and cut into ¼” slices via a mandoline or manually with a knife)
 4 tbsp maple syrup (or date paste, link in Chef’s Notes)
 2 tbsp lemon juice (freshly squeezed)
 2 tsp ground cinnamon
  tsp nutmeg
  tsp salt (optional)

Directions

Preheat the oven to 350 degrees F.

Add the apple slices, maple, lemon juice, cinnamon, nutmeg and salt, if using, to a large mixing bowl. Carefully stir to fully coat the apples.

Transfer the mixture into a 9”x9” or similarly sized baking dish and spread the apples out evenly (you may have to layer some slices). Scrape any liquid that has collected in the bottom of the bowl and pour over the top of the apples.

Bake the apples for 25 minutes, until fork-tender but not completely mushy, tossing halfway through.

Serve hot and enjoy by itself or with toasted oats, warm oatmeal or plant-based yogurt.

Chef's Notes

Substitutions
Use pears instead of apples.

Sugar-free
In place of maple syrup use date paste.

Add more delicious nutrition
Add toasted walnuts or pecans on top.

Sprinkle with hemp or chia seeds.

Storage
Store in an airtight container in the refrigerator for up to 5 days.
