Ingredients

 ½ cup avocado (about 1 medium avocado, seed removed)
 ¼ cup organic apple cider vinegar
 ½ cup organic apple (roughly cut into ½-inch cubes)
 1 small garlic clove
 ½ tsp ground cumin
  tsp ground ginger
 1 dash ground cinnamon
 ½ cup water
 salt (optional to taste)
 pepper (optional to taste)

Directions

Add all ingredients except the salt and pepper to a blender or food processor.

Blend until smooth (it might take a few blends to get all of the apple skin blended (By the way, you want that part since it’s where the fiber lives!)

Taste for salt and pepper, if desired. Keep the dressing as is and use it as a dip or on tacos. However, if you want to use it on a salad, you might want to add 2 to 3 more tablespoons of water to create a thinner consistency.

Chef's Notes

Substitutions
Instead of a garlic clove, use ⅛–¼ teaspoon of garlic powder.

Use ¼ teaspoon of fresh minced ginger in place of ginger powder.

Apples
You can use any variety of apple you’d like. This recipe was created with Honey Crisp because it is sweet and juicy.

How to use
Top on salads, grain bowls, tacos, or use as a veggie dip.

Storage
Keep in an airtight container for 5–7 days in the refrigerator.
