Oatmeal Macadamia Nut Cookies

Ingredients

 1 cup organic oats
 1 cup almond flour
 1 tsp baking soda
 2 pinches salt(optional)
 1 cup Medjool datespitted
 ¾ cup plant-based milkunsweetened
 1 tsp vanilla extract
 2 tbsp chia seeds
 ½ cup macadamia nuts

Directions

Preheat oven to 350 degrees F.

Add the oats, almond flour, baking soda, and salt, if using, to a large bowl. Mix well.

Add the plant-based milk, dates, vanilla extra and chia seeds to a blender or food processor and blend until the dates are mostly blended (it’s okay if there are date pieces).

Transfer the wet ingredients to the dry ingredients in the bowl and mix well.

Fold in the macadamia nuts.

With clean hands, scoop out about 2 tablespoons of cookie dough and press into palms before laying on a parchment-lined baking sheet.

Bake for 20 minutes. Makes 12 macadamia nut cookies.

Chef’s Notes

Substitutions
Use oat flour in place of almond flour.

Instead of macadamia nuts, use chopped almonds, pecans or hazelnuts.

Use cacao nibs or 85% dark chocolate in place of macadamia nuts.

In place of macadamia nuts, add raisins or cranberries.

Nut-free
Omit the macadamia nuts (they’re still tasty!)
