Ingredients

5 cups plums, pitted and sliced (about 10 plums)
 1 cup water
 2 cinnamon sticks
¾ cup date paste (link in Chef’s Notes), +¼ cup as needed

Directions

1

If you have the sauté option available on your slow cooker, sauté the plums for 5 minutes. If you don’t have the sauté option available, simply add the plums to the slow cooker and move to step two.

2

Add the remaining ingredients to the slow cooker, starting with ¾ cup of date paste.

3

Cook on high for 2 hours or low for 4 hours.

4

Remove the lid and cinnamon sticks.

5

Once the plums have cooled a bit, add them to a blender or food processor. Blend until smooth.

6

Taste and adjust the sweetness, if you’d like, by adding more date paste as desired.

Chef's Notes

Substitutions
Use maple syrup in place of date paste (suggest using ⅔ the amount since maple syrup is slightly sweeter than date paste).

Stovetop Method
Add plums to a stovetop pot. Heat on medium-high for 3–5 minutes, stirring often to prevent plums from sticking. Add 1 cup of water, along with the cinnamon sticks, and bring to a boil. Lower to simmer, cover and cook, stirring occasionally to prevent sticking on the bottom. Cook for approximately 10 minutes or until the plums start to break apart. Allow to cool a bit before removing the cinnamon sticks and transferring the plums and ¾ cup of the date paste to a blender. Blend until smooth. Taste and add more date paste if you’d like more sweetness.

Prep Ahead
Make the date paste ahead of time and store in an airtight container for 5–7 days or freeze for up to three months.
