Spicy Apricot Margarita Mocktail

Ingredients

 10 apricots (pitted and roughly chopped)
 ½ cup pineapple (roughly cubed)
 1 cup jalapeños (seeds removed and roughly diced, about 1 large or 2 medium)
 1 tbsp lime juice (freshly squeezed)
 1 cup date paste
 12 oz water (still or sparkling)
 4 lime wedges (for garnish)
 4 jalapeño slices (for garnish)

Directions

To a small saucepan, add the apricots, pineapple, and jalapeños plus ¼ cup water. Bring to a boil, then reduce to a simmer for 10 minutes or until the apricots are tender.

Transfer the mixture to a blender (remove the jalapeños if you prefer less spicy) along with the lime juice and date paste. Blend until smooth.

Strain the mixture through a fine mesh strainer or nut milk bag into a large pitcher.

Add the water to the pitcher and stir.

Add ice to 4 serving glasses and pour the mixture over the ice.

Serve your apricot mocktails with lime wedges and jalapeños on the rims.

Chef's Notes

Substitutions
In place of apricots try peaches, nectarines, or watermelon.

In place of jalapeño, try habanero peppers if you enjoy a spicy kick.

How Much Jalapeño to Add?
Depending on the spice level you enjoy and the spiciness of your jalapeño, you may use more or less. Personally, we love spice and prefer ½ cup of jalapeño over ⅓ cup, but this is really personal preference. Taste it with less and add more if youʼd like!

How Much Date Paste to Add?
If you prefer a little tang and sour over sweet, opt for less date paste. If you like a little sweet to perfectly balance the sour, then you may want to opt for ¾ cup over ½ cup. Again, start with the smaller amount and add more to your personal preference.

Slushy Consistency Versus Mocktail Consistency
The above amount of water, 12 ounces, provides a consistency that is closer to a slushy margarita. If you prefer a thinner consistency, consider doubling the water. Straining wonʼt make a difference as the fiber blends down quite a bit.

Storage
Store leftover apricot mocktails in an airtight container in the refrigerator for up to 4 days.
