Spinach Jewelled Salad

Summary

While the dressing for this salad is called “Superhero Dressing,” you might call the entire dish “Super Salad for Your Health.” There are so many essential nutrients that are packed into this gem of a meal including vitamin E, vitamin C, carotenoids, fiber, and much much more thanks to the spinach, avocado, nuts, seeds, pomegranate, and radish. Enjoy it often!

Ingredients

“Superhero Dressing”
 ½ cup organic spinach leaves (packed)
 ½ cup ripe avocado (+¼ cup as desired, chopped)
 ½ tbsp organic miso (mellow white or chickpea)
 ½ tsp dijon mustard
 ½ tsp salt (optional)
  cup water (or more to thin as desired)
 1 tbsp lemon juice (+½ as desired, or red wine vinegar)
 1 tsp pure maple syrup (or date paste, see Chef's Notes)
 ground black pepper (to taste)
Jewelled Salad
 3 cups organic baby spinach (roughly measured)
 3 cups organic romaine lettuce (chopped and roughly measured, or other lettuce of choice)
  cup "superhero dressing" (or ½ cup)
 ½ cup radish (sliced, or ½ cup sliced organic cucumber)
 ¼ cup pomegranate seeds (or ⅓ cup)
 3 tbsp pumpkin seeds (or chopped walnuts)
 ½ cup avocado (chopped & drizzled with a squeeze of lemon juice, optional)

Directions

Make the “Superhero Dressing.” Puree the spinach, avocado, miso, mustard, salt if using, ⅓ cup of water, 1 tablespoon of the lemon juice (or vinegar), maple syrup, and black pepper until smooth. Add more lemon juice or other seasonings to taste. If using the extra amount of avocado, use extra water to thin.

Place greens in a bowl. Drizzle with the dressing.

Top with sliced radishes or cucumbers, pomegranate seeds, and pumpkin seeds or chopped walnuts.

If using avocado, distribute chunks over the salad.

Serve, adding extra dressing if desired, and any other seasonings.

Chef's Notes

Substitutions
Instead of maple syrup, use our Super Simple Homemade Date paste.

Prep Ahead
The “Superhero Dressing” will keep in a sealed jar in the refrigerator for one to two days.

Make it a meal
For a heartier salad add some white beans or cooked grains.

Storage
Store leftover salad dressing in an airtight container in the refrigerator for up to 3 days.
