Strawberry Spinach Salad

Ingredients

 4 cups organic spinach (chopped)
 ½ cup organic strawberries (leaves removed, berries quartered)
 2 tbsp red onion (diced)
 ¼ cup Sweet and Savory Pecans (link in Chef’s Notes, chopped)
 ¼ cup Beet Balsamic Dressing (link in Chef’s Notes, plus more if desired)
 ground black pepper (optional) to taste

Directions

Make your Sweet and Savory Pecans and Beet Balsamic Dressing and set aside.

Assemble your salad: Add the chopped spinach, strawberries, red onion, and pecans to a large salad bowl and toss.

Add ¼ cup of Beet Balsamic Dressing to the salad and toss again. Taste and add more dressing as desired.

Divide between serving bowls and add optional ground black pepper.

Chef's Notes

Substitutions
Substitute spinach with arugula or your favorite leafy greens of choice.

Substitute strawberries with blueberries or raspberries.

In place of red onion use shallots.

Prep Ahead
Prepare the Sweet and Savory Pecans ahead of time and store in an airtight container at room temperature for up to 2 weeks or in the refrigerator for up to one month.

Prepare the Beet Balsamic Dressing ahead of time and store in an airtight container in the refrigerator for up to 7 days.

Storage
Store in an airtight container in the fridge for up to 3 days.
