Ingredients

Salad
 2 cups organic strawberries (hulled and quartered)
 ¼ cup red onion (diced)
 2 tbsp mint (minced)
 2 tbsp basil (optional; minced)
 1 sprinkle of salt (optional)
Dressing
 1 tbsp tahini
 2 tbsp maple syrup (or date paste, link in Chef’s Notes)
 1 tbsp lime juice (freshly squeezed)
 2 tbsp slivered almonds (or sliced almonds)

Directions

Add the strawberries, onion, mint, and basil, if using, to a medium bowl. Stir well. Add a little sprinkle of salt, if desired.

Make your dressing: In a small bowl, whisk together the tahini, maple syrup or date paste, and lime juice until well combined.

Divide the berry mixture between two bowls. Drizzle the dressing over the berry mixture. Top Strawberry Mint Salad with slivered or sliced almonds.

Chef’s Notes

Substitutions
Instead of red onion, use shallots or yellow onion.

Instead of basil, use cilantro.

Sprinkle sunflower seeds or chopped walnuts over top instead of almonds.

Use lemon in place of lime.
