Ingredients
3 cups organic kale (stems removed, chopped)
1 cup organic edamame (frozen, thawed)
1 cup cooked organic whole grain (your choice — quinoa, millet, buckwheat, farro, brown rice, etc.)
1 avocado (chopped)
½ cup red onion (chopped)
½ cup carrots (shredded)
4 radishes (raw, sliced)
½ cup walnuts (chopped)
¼ cup sunflower seeds (raw, unsalted)
¼ cup dried cranberries (fruit juice sweetened)
2 tbsp hemp seeds
¼ cup cilantro (chopped)
Directions
1To a large bowl, add all ingredients and mix well.
2Divide between two medium bowls.
Chef's Notes
Substitutions
Use any unsulfured, dried fruit you have on hand in place of the cranberries.
In place of kale use arugula, mixed greens, or spinach.
Pop in some pumpkin seeds as a sub for the sunflower.
Use pecans, almonds, pistachios, or cashews in place of the walnuts.
Substitute lentils, black beans, chickpeas, or another loved legume for the edamame.
Use yellow, white, or green onion in place of red onion.
Substitute another herb such as dill, parsley, or basil in place of cilantro.
Prepare Ahead
Prepare Creamy Citrus Dressing ahead of time. Store in an airtight container for up to 5 days.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
