Creamy Citrus Dressing

Summary

The combination of cashews and the citrus is pretty magical. This dressing is a show-stopper on top of the 12-Ingredient Superfood Salad (see note), and it would also be delicious on top of steamed veggies, a grain bowl, in tacos, or on top of sweet potatoes. Make extra so you can enjoy it all week!

Creamy Citrus Dressing

Ingredients

 ½ cup cashews (soaked in water for 4–6 hours)
 ½ cup orange juice (freshly squeezed from one large or two medium organic navel oranges)
 2 tbsp organic orange zest (zest before juicing)
 1 medium lemon (juiced)
 1 tbsp organic apple cider vinegar
 1 tbsp tahini
 1 shallot (chopped)
 salt (optional)
 pepper (optional)

Directions

Place all ingredients in a food processor or small blender and blend until smooth.

Adjust flavors with extra orange juice, lemon, or salt and pepper if desired.

Chef's Notes

Substitutions

In place of cashews, try plain, unsweetened plant-based yogurt or tofu (silken or firm). 

Navel oranges are in season, but if you can’t find them any juicy oranges will do!

Use green or yellow onion in place of the shallot.

Use extra orange juice in place of the lemon.
