Add all of the ingredients to a large bowl and whisk until smooth and the miso and chickpea flour are completely dissolved. Alternatively, you could add all ingredients to a blender and blend until smooth.
Transfer the chickpea batter to a stovetop pot, heat on medium, and continuously stir for approximately 3–5 minutes. The batter will start to clump together about 2 minutes into heating. Keep stirring and cooking until it forms a bit of a dough ball, about 5 minutes.
Transfer the dough to a parchment-lined loaf pan or baking dish, spreading the chickpea tofu out to the edges of the loaf pan or dish. It should be about 1” thick.
Refrigerate for at least one hour before using in dishes like stir-fries, wraps, salads, tacos, and more! (See Chef’s Notes.)

How to Use Chipotle Cheese Chickpea Tofu
Chipotle Cheese Chickpea Tofu has a cheesy umami flavor compared to store-bought soy-based tofu, which is neutral in flavor. Chickpea tofu has a firmer texture, therefore it's great to use as a hearty protein in your favorite savory recipes. Some of our favorite ways to use chickpea tofu are added to stir-fries; baked, then added to salads as croutons; tossed into soups and stews; baked and added to wraps; or grilled with veggies on skewers. You can also crumble the tofu for a delicious tofu scramble.
How to Bake or Air Fry the Tofu
Bake the Chipotle Cheese Chickpea Tofu: Preheat oven to 375 degrees F and line a baking sheet with parchment paper. Cut the chickpea tofu as you’d like. For example, if using in a stir fry, cut it into 1” cubes. If adding it to a wrap, cut it into 1” wide strips. After it’s cut, spread it out evenly on the baking sheet for even baking. Bake for 20 minutes, flipping halfway through. Alternatively, use your air fryer, setting it at 400 degrees F and air frying for 7–10 minutes.

Store in an airtight container in the refrigerator for up to 7 days.
