Ingredients

 1 ½ cups chickpeas (homemade or BPA-free canned, drained and towel dried)
 1 tbsp maple syrup (or date paste, link in Chef’s Notes)
 ¾ tsp cinnamon
 ¼ tsp salt (optional)

Directions

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

Drain the chickpeas if using canned and make sure they’re dry before adding the maple and cinnamon.

Mix the maple and cinnamon together in a medium bowl until they are blended.

Add the chickpeas to the bowl and toss with the spices until the chickpeas are evenly coated.

Spread the cinnamon chickpeas on the baking sheet and bake for 40 minutes (or until crispy), tossing halfway through.

Chef’s Notes

Substitutions
Instead of chickpeas, use another white bean of choice.

Whole Food Sweetener
For a sugar-free version of Cinnamon Spiced Chickpeas, you can try date paste in place of maple syrup. However, note that maple syrup definitely works best here and they may not turn out as crispy with date paste.

Prep Ahead
Make your chickpeas ahead of time if you’re using homemade.

Storage
Store cinnamon chickpeas in an airtight container at room temperature for up to 3 days. Note that they will not maintain their crispness and you may want to reheat them for 10 minutes before enjoying again.
