Ingredients

 1 ½ cups black beans, home cooked or 15-ounce BPA-free can
 1 ½ cups organic corn, fresh off the cob or frozen
 1 medium organic tomato, diced
 1 medium red bell pepper, chopped
 ¾ cup red onion, chopped
 2 garlic cloves, minced
 ¾ cup cilantro, chopped
 1 large lime, juiced
 ¼ tsp salt (optional)
 ¼ tsp black pepper (optional)

Directions

In a large bowl, mix all of the ingredients together.

Add salt and pepper if desired.

Chill in the refrigerator for 30 minutes or more before serving with your favorite tacos, grain bowl, or salad.

Chef's Notes

Substitutions
Use any bean you have on hand in place of black beans.

Any type of tomato works here. Use cherry, Roma, grape, or whatever is growing in your garden.

If you don’t have red onion, use yellow or white.

Substitute ¼ tsp garlic powder for two garlic cloves.

How to enjoy this salsa
Top on a salad.

Add to a vegetable wrap.

Top on a bean burger.

Use it as a watermelon radish dip.

Incorporate in tacos or burritos.

Add to avocado toast.

Use in a grain bowl.
