Ingredients
1batch Vegan Cream Cheese (link in Chef’s Notes)
2organic whole grain bread slices
1cuporganic arugula
1large avocado (pitted, mashed)
2radish (sliced)
2tbspgreen onion (or chives)
1tbspEverything Bagel Seasoning (link in Chef’s Notes) +1 Tbsp as desired
salt (optional) to taste
ground black pepper (optional) to taste
2lemon wedges
Directions

Make the Vegan Cream Cheese and set aside.

Toast the two slices of whole grain bread.

Once the bread is toasted, divide between two plates.

Spread 1–2 tablespoons of Vegan Cream Cheese on each slice.

Divide the arugula between the two pieces of toast, then add the mashed avocado on top of each piece, followed by the radish and green onion or chives.

Sprinkle the desired amount of Everything Bagel Seasoning on top of each avocado toast.

Season with optional salt and pepper.

Serve with lemon wedges.
Chef's Notes
Substitutions Substitute cream cheese with hummus, cashew cream, or your favorite savory spread.
Substitute arugula with spinach, baby kale, or your favorite chopped leafy greens.
Substitute radishes with sliced tomatoes, sun-dried tomatoes, or pickled vegetables.
Prep Ahead Prepare Vegan Cream Cheese ahead of time. Store in an airtight container in the refrigerator for up to 4 days.
Storage If you have any leftovers, store all ingredients separately in airtight containers in the refrigerator for up to 5 days.
