Summary

Really, this is the simplest plant-based “cheese” you’ll ever make. It’s made with only five ingredients and requires no soaking or baking. The nutritional yeast gives it a cheesy taste while miso lends an umami flavor and hemp offers an extra boost in nutrition. You could probably rename this “plant-based protein, omega-3, probiotic-rich cheese spread!” The nutrition analysis for this cheesy topper is pretty impressive — it’s off the charts for B vitamins (including B 12!), a good source of zinc and selenium and has 5 grams of fiber per 2 tablespoon serving.

Ingredients

 ½ cup nutritional yeast
 ½ cup hemp seeds
 2 ¼ tbsp organic miso (mellow white or chickpea)
 ¾ tsp garlic powder
 1 tbsp apple cider vinegar

Directions

Add all ingredients to a small food processor and blend until hemp seeds are blended. Alternatively, you can also use an immersion blender or a spoon to mix it all together. Just know that the hemp seeds will still be whole if only using a spoon — and that’s okay!

How to enjoy this
Spread on top of crackers.

Spread on a sandwich with grilled tempeh, lettuce, tomato and onion.

Add a dollop on top of salad or toss in the Build-Your-Own Salad for a cheesy flavor!

Use as a vegetable dip.

Build a vegetable sandwich with sliced cucumber or radish as your “bread,” spread the “cheese on each slice and add chopped vegetables in between. Bonus points if you add kimchi too!

Add some water until you achieve the desired consistency for either a cheesy grain bowl sauce or salad dressing.

Flavoring ideas
Make an Italian herb cheese by adding fresh rosemary, thyme or oregano.

Add chopped dill or cilantro.

Make it spicy with crushed red pepper or cayenne.
