Strawberry Shortcake Smoothie

Summary

Berries are perfect for smoothies and are available year-round since they’re nutritious fresh or frozen. Strawberries are powered with vitamin C, cashews have lots of zinc, and hemp seeds are a great source of plant-based protein. Enjoy this smoothie as an on-the-go breakfast or snack.

Ingredients

 1 cup organic strawberries (sliced, green tops removed)
 ½ cup cashews (raw)
 1 cup water
 ½ cup organic rolled oats
 2 medium dates (pitted)
 2 tbsp hemp seeds
 1 tsp pure vanilla extract (preferably alcohol-free)
 1 sprig of mint (as a garnish; optional)
 1 dash ground cinnamon (optional)

Directions

Add all ingredients except mint and cinnamon to a blender and blend on high until strawberries, cashews, and hemp seeds are completely blended. An immersion blender will also work but might take a little longer to blend.

Garnish smoothie with a sprinkle of cinnamon, more hemp seeds and a sprig of mint if desired.

Chef's Notes

Substitutions
Organic blueberries, blackberries and/or raspberries could be a delicious substitute for strawberries.
Pecans or walnuts can be used in place of cashews, but tend to result in a grittier texture.
Whichever rolled oats you have on hand, quick or old-fashioned, work just fine. Organic is important, though, to avoid glyphosate!

Layer it up
Add a teaspoon of your favorite superfood powder like spirulina, maca or moringa to the smoothie.
Add a teaspoon of cinnamon to really warm up the spice quotient.
Add 1–2 tablespoons of chia seeds for crunch and texture (you might need to add a little extra water as well until you get the desired consistency).
Add a tablespoon of cacao powder for a chocolatey berry drink.
Add ½ of a banana for a banana strawberry treat.

Storage
Store your extra strawberry shortcake smoothie in an airtight container in the refrigerator for up to three days
