Umami Vegan Dashi
Dashi is a Japanese seaweed-based stock that usually contains kombu and bonito flakes (dried fish), but there are a few variations depending on the use of the dashi. To achieve a similar umami-rich flavor as the traditional version, we swapped bonito flakes with shiitake mushrooms. When simmered in the Instant Pot, the flavors become rich, concentrated, and deeply robust, which is the key to making a delicious plant-based stock.
