Prepare your carrots by measuring them against the length of your buns and trimming off the tops and bottoms as needed. If you want a more traditional hot dog shape, use a paring knife to round the ends. Peel the carrots and set them aside.
Add all of the marinade ingredients to a medium-sized pot and whisk them together until well combined.
Add the carrots and bring to a boil. Then reduce the heat to medium and cook for 8-10 minutes, or until the carrots are tender but not overcooked.
Remove from the heat, cover with a lid, and let set for 30 minutes to cool and absorb the marinade. Alternatively, allow the carrots to cool completely in the marinade at room temperature, transfer them to a storage container, and marinate overnight in the refrigerator to deepen the flavor.
While the carrots are marinating, make the Creamy Apple Slaw if you did not prep it ahead of time, set aside.
Once marinated, you can serve them immediately, or you can grill them on the stovetop for a caramelized result!
Grill: Preheat a large stovetop pan over medium heat. Grill for about 2-3 minutes, turning occasionally until browned and heated through.
Add to your buns (toasted optional) and top with a generous serving of Creamy Apple Slaw.
Chef’s Notes
Substitutions
In place of carrots, try parsnips.
If sensitive to onion and garlic, omit in this recipe.
In place of Creamy Apple Slaw, choose another topping of your choice. The possibilities are endless, feel free to get as creative as you’d like!
To reduce the sodium total in this recipe reduces the coconut aminos to between 1 and 2 tablespoons, and increase the water needed to ½ cup.
Prep Ahead
Make Easy Creamy Apple Slaw ahead of time.
If marinating in advance, keep the carrots in the marinade for no more than 24 hours, then separate them. You can reduce the marinade until it thickens and use it as a flavorful condiment for your plant-based carrot dog creations.
