Sunomono (Japanese Cucumber Salad)
Sunomono refers to salads with vinegar and is typically served in small bowls as a side dish or appetizer. It’s possible to prepare Sunomono using different types of vegetables; however, Japanese cucumbers are among the most commonly used. This dish features ingredients, in addition to the cucumbers, that may support hair, skin, and nail growth including wakame or nori (good sources of iron, iodine, and zinc), sesame seeds (a good source of calcium), and red bell pepper (a good source of vitamin C). This refreshing salad is best served chilled as a summertime appetizer or side.
