Ingredients
5-Minute Tofu Scramble
7ozorganic tofu (firm or extra firm drained, and lightly pressed (see Chef’s Notes), or super firm (doesn’t need to be pressed), crumbled)
1tbspnutritional yeast
½tspturmeric
1tspgarlic powder
1tsponion granules
½tspkala namak (or other salt; optional)
Toast
2slices of organic whole grain bread (toasted)
1clovegarlic (optional)
1large avocado (pitted, mashed)
1cupmicrogreens (or arugula)
hot sauce (to taste; optional)

Heat a large stovetop pan over medium-high heat.

Once the pan is hot, add the tofu, spices, and 1–2 tablespoons of water. Cook until the tofu is heated through and the water has evaporated, about 5 minutes, set aside.

Toast your bread, then set it on separate plates in preparation for assembling the dish.

Rub each piece of toast with the garlic clove, if using to infuse the toast with fresh garlic flavor.

Spread the avocado mash between the slices and top with the microgreens of your choice.

Substitutions In place of tofu, try tempeh.

If You Want to Double This Recipe Tofu packages typically contain 14–16 ounces. This recipe calls for 8 ounces because crumbling the tofu creates a much larger volume that is better suited for servings of 4–6. To increase the serving, use the entire package of tofu.
