Ingredients

5-Minute Tofu Scramble
 7 oz organic tofu (firm or extra firm drained, and lightly pressed (see Chef’s Notes), or super firm (doesn’t need to be pressed), crumbled)
 1 tbsp nutritional yeast
 ½ tsp turmeric
 1 tsp garlic powder
 1 tsp onion granules
 ½ tsp kala namak (or other salt; optional)
Toast
 2 slices of organic whole grain bread (toasted)
 1 clove garlic (optional)
 1 large avocado (pitted, mashed)
 1 cup microgreens (or arugula)
 hot sauce (to taste; optional)

Directions

Heat a large stovetop pan over medium-high heat.

Once the pan is hot, add the tofu, spices, and 1–2 tablespoons of water. Cook until the tofu is heated through and the water has evaporated, about 5 minutes, set aside.

Toast your bread, then set it on separate plates in preparation for assembling the dish.

Rub each piece of toast with the garlic clove, if using to infuse the toast with fresh garlic flavor.

Spread the avocado mash between the slices and top with the microgreens of your choice.

Divide the tofu scramble between the slices, and if you like it a bit spicy, add your desired amount of hot sauce.

Chef’s Notes

Substitutions
In place of tofu, try tempeh.

In place of microgreens, try sprouts of your choice.

In place of sliced bread, try lettuce wraps.

If You Want to Double This Recipe
Tofu packages typically contain 14–16 ounces. This recipe calls for 8 ounces because crumbling the tofu creates a much larger volume that is better suited for servings of 4–6. To increase the serving, use the entire package of tofu.

Storage
