Summary

This nutritious and flavorful sauce can easily elevate any Southwest-inspired meal, soup or bowl. Not to mention, it only takes ten minutes to prepare!

Ingredients

 1 cup ripe avocado (cut in chunks — about 1 ½ medium-large avocados)
  cup raw cashews
 1 ½ tbsp lemon or lime juice (freshly squeezed, +½ Tbsp as desired)
 ½ cup water (up to ⅔ cup as needed)
 ½ tsp salt (optional)
 ¼ tsp maple syrup
 ¼ tsp chipotle hot sauce (optional, to taste)

Directions

Using a blender or immersion blender and deep cup or jar puree all ingredients (starting with ½ cup water).

Start on a slow speed to incorporate cashews, and then increase speed to high until very smooth and creamy.

Add additional water to thin as desired, and salt/chipotle sauce to taste.

Dollop cream on soup, or use to dip with tortilla chips.

Chef's Notes

Cashews
Soaking them beforehand is recommended, especially if you don’t have a high-speed blender, but not essential.

Sweetener Sub
Feel free to use coconut nectar in place of the maple syrup.

Sugar-free
Omit the syrup/nectar.

Chipotle hot sauce
If you want a hint of flavor but no added heat, add a modest amount of hot sauce. If you like the heat, though, add more hot sauce to taste!

Kid-Friendlier
Skip the hot sauce altogether, and use this cream to top your kiddos’ burritos, tacos, or even pasta or simple beans ‘n rice.

Serving Suggestions
This sauce has star power beyond pairings with Southwest-inspired dishes. By merely omitting the chipotle seasoning, this sauce transforms into a creamy, sumptuous topping for just about anything, such as baked beans, rice and grain dishes, pasta casseroles, pizza, baked potatoes, salads, and stews.
