In a small bowl, add chia seeds and water. Stir and let sit for 5 minutes so the chia seeds gel.

Meanwhile, add the oats, coconut, dates, vanilla, cinnamon, maca powder, and salt (if using) to a food processor (small processor works well here, as well as a hand held).

Blend until smooth.

Add the chia seeds and blend again.

Scoop the bites with a teaspoon and with clean washed hands, roll mixture into small bite sized balls.

Add the 2 Tbsp of coconut flakes to a small bowl. Roll the balls in the coconut until coated.

Enjoy right away or store in the refrigerator for 5–7 days.

Substitutions Instead of rolling the bites in coconut, you could roll them in goji berries, hemp seeds or chia seeds for a crunch.
