Crispy Okra Fries with Garlic Cashew Cream

Ingredients

 2 cups okra, sliced in half, lengthwise (approximately 12 ounces)
 ¼ cup plant-based milk (plain, unsweetened )
 1 tsp organic apple cider vinegar
 ¼ cup organic cornmeal
 2 tbsp organic oat flour
 1 tsp oregano
 ½ tsp garlic powder
 1 tsp onion granules
 1 tsp smoked paprika (optional)
 2 tbsp nutritional yeast
 ¼ tsp salt (optional)
 ¼ tsp ground black pepper (optional)
 1 batch Garlic Cashew Cream (link in Chef’s Notes)

Directions

Set the Air Fryer to 400 degrees F.

Add the plant-based milk and apple cider vinegar to a shallow dish. Add the okra and toss to coat. Set aside.

In another medium bowl add the cornmeal, oat flour, oregano, garlic powder, onion granules, smoked paprika, nutritional yeast, salt and pepper, if using. Mix to combine.

Transfer the okra, one at a time, with clean hands and coat each piece in the cornmeal mixture before placing it in the Air Fryer basket.

Bake for 8–10 minutes or just until crispy and browned, shaking the basket halfway through. You may have to do this in two batches depending on your Air Fryer basket size.

Serve with Garlic Cashew Cream.

Chef's Notes

Substitutions
Use lemon juice in place of apple cider vinegar.

Use onion powder in place of onion granules.

Flour-Free
Use more cornmeal in place of oat flour or use almond meal in place of oat flour.

Oven Directions
Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. Add the plant-based milk and apple cider vinegar to a shallow bowl. Add the okra and toss to coat. In another medium bowl add the cornmeal, oat flour, oregano, garlic powder, onion granules, smoked paprika, salt and pepper, if using. Mix to combine. Transfer the okra, one at a time, with clean hands and coat each piece in the cornmeal mixture before placing it on the parchment-lined baking sheet. Bake for 20 minutes or just until crispy and browned, flipping halfway through.

Prep Ahead
Prepare the Garlic Cashew Cream ahead of time and store in an airtight container in the refrigerator for up to 5 days or freeze for up to one month.

Storage
Best if consumed immediately. If you need to store them, then store them in an airtight container in the refrigerator for up to 3 days. Reheat in the Air Fryer for 5 minutes or in the oven for 10–15 minutes. Note that the breading may not stick as well once they’ve been chilled!
