Preheat oven to 425 degrees F and line a baking sheet with parchment paper. Alternatively, heat air fryer to 375 degrees F.
Add the almond meal, cornmeal, garlic powder, nutritional yeast, and salt and pepper, if using, to a large bowl. Mix to combine. Add the sliced onions and toss until coated. Transfer the coated onions to the baking sheet, spreading out as evenly as possible (some may overlap if they’re very thinly sliced).
Bake until golden brown, 10–15 minutes (or air fry for 10–12 minutes), tossing halfway through.
Use as a delicious topping for casseroles, soups and stews, salads, or grain bowls.

Substitutions
In place of onions try shallots.
In place of almond meal try ground sunflower seeds.
Storage
Store in an airtight container in the refrigerator for up to 4 days. To reheat, warm in the oven at 425 degrees F (or an air fryer at 375 degrees F) for 5 minutes.
