Directions
Add the chia seeds, plant-based milk, lemon juice, date paste, coconut and salt, if using, to a medium-sized bowl.
Stir well so that the chia seeds are dispersed throughout the milk mixture.
Place in the refrigerator for 30 minutes. Stir again after approximately 30 minutes and let sit for another 1–2 hours before serving. The longer it sits the more the chia seeds will absorb the liquid and gel, creating a smooth texture rather than a crunchy chia seed texture.
Once ready to serve, top with lemon zest and chopped pecans, if desired.

Substitutions
Substitute fresh lime or orange juice for lemon.
Nut-free
Top the pudding with hemp seeds, sunflower seeds, or pumpkin seeds in place of pecans.
