Summary

What comes to mind when you think of smoothies? Most likely it’s fruit with a hint of veggies and more sweet than savory. But salad lovers can enjoy smoothies too! Blend your favorite salad ingredients to create a deliciously creamy smoothie that’s packed with flavors from cucumber, lime, cilantro (optional!), and shallots (yes, shallots!), with a little mango for just a touch of sweetness.

Ingredients

2 cups cucumber (skin peeled, sliced. About 2 large cucumbers)
¾ cup avocado (smashed. About 1 large avocado)
 1 handful organic spinach
 1 cup mango (chopped)
 2 tbsp lime juice
 ¼ cup cilantro (chopped, optional)
 1 jalapeño (sliced, deseeded, optional)
 ¼ cup shallot (roughly chopped)
 1 tsp ground cumin
1 cup water (+1 cup, start with one cup)
 1 pinch salt (optional)

Directions

1

Add all ingredients to a high-speed blender, starting with 1 cup of water. Blend on high until smooth.

2

Add more water until the desired consistency is reached.

3

Taste for additional flavors of your choice (more lime for tartness, more cucumber for saltiness, or more avocado for creaminess).

4

Split between two 16 ounce glasses or mason jars and enjoy!
