pineapple salsa

Ingredients

 1 cup organic tomato (chopped)
 ¾ cup red onion (chopped)
 1 cup pineapple (chopped)
 ¾ cup cilantro (chopped)
 2 tbsp organic jalapeño (optional, diced)
 1 large lime (juiced)
 ¼ tsp salt (optional)
 ¼ tsp pepper (optional)

Directions

Add all of the ingredients to a medium bowl and mix well.

Refrigerate for 30 minutes or longer.

Store in a well-sealed container in the refrigerator for 5–7 days (if it lasts that long!).

Chef's Notes

Substitutions
Grape tomatoes did well here, though any tomato will work, especially if they come from your garden!

Frozen, fresh, or canned (sugar-free) pineapple will work.

In place of lime, try lemon or a little vinegar of choice.

Use white or yellow onion in place of red.

Storage
Store in an airtight container in the refrigerator for up to 5 days.
