Add all ingredients to a high-speed blender and blend until smooth.
Taste for additional flavor of your choice (more jackfruit for sweetness, more lime for tartness)
Pour the jackfruit mixture into popsicle molds, filling ¾ full to allow for expansion.
Freeze for at least two hours before serving.

Substitutions
For a creamer popsicle add 1/4 cup of soaked cashews or ½ of an avocado.
In place of mango try pineapple.
In place of jackfruit try durian fruit which is another popular Asian fruit that can often be found fresh or frozen in most international markets. Note that durian has a strong scent, but the creamy consistency, especially when blended with other ingredients, has been said to taste like ice cream.
Finding Ripe Jackfruit.
If you cannot find fresh jackfruit in the grocery store, look for canned ripe jackfruit. It will typically say “jackfruit in syrup,”. If you can only find the version packed in syrup, make sure to drain and rinse it thoroughly before using it in this recipe.
Storage
Store in an airtight container in the freezer for up to six weeks.
