4-Ingredient Banana Oatmeal Nut Butter Breakfast Cookies

Summary

Full disclosure, these are not sweet so don’t let the name “cookie” deceive you! They are meant to nourish and satiate you through the morning with the protein from the nut butter, natural fruit sugar (and prebiotics!) from the banana, and fiber from the oatmeal. Enjoy them for breakfast or a snack!

Ingredients

 2 medium bananas (fully ripe)
 1 ½ cups organic rolled oats
 ½ cup organic peanut butter (or nut or seed butter of choice)
 1 tsp vanilla extract
 1 pinch salt (optional)

Directions

Preheat the oven to 350 degrees F.

Add all ingredients to a food processor and blend until smooth.

Drop 16 spoonfuls of dough onto a parchment-lined baking sheet.

Flatten out into cookie shapes. They won’t expand so there’s no need to spread apart.

Bake for 15 minutes.

Chef's Notes

Alternatives to a food processor
If you don’t own a food processor, mash the banana in a large bowl with a fork, then mix in the oats, peanut butter, vanilla, and salt, if using. Mix well before dropping by the spoonful on the baking sheet.

Add even more nutritious and delicious ingredients
Add walnuts, pecans or almond pieces to the batter before baking.

Add your favorite dairy-free dark chocolate chips.

Add dried fruit of choice.

Include unsweetened coconut flakes.

Add ½ teaspoon of your favorite superfood powder like maca, matcha tea, or lucuma.
