Add the water, date paste, cinnamon, ginger, and cloves to a stovetop pot. Bring to a boil and stir until the date paste is dissolved. Remove from heat.
Add the dried hibiscus, cover, and allow to steep for 20 minutes.
Strain the mixture, composting the spices and hibiscus if possible.
Taste for additional sweetness to your liking.
Pour over ice or mix with seltzer water for a spritzer, and garnish Agua de Jamaica with fresh citrus slices.
Chef's Notes
Substitutions
In place of date paste try maple syrup or other sweetener of choice.
Instead of citrus, garnish with fresh mint, basil, or other fruit or herb of choice.

Prepare the date paste ahead of time.
Storage
Store Agua de Jamaica in an airtight container in the refrigerator for up to 5 days.
