Autumn sunrise smoothie

Ingredients

Base
 1 cup mango (fresh or frozen, cut into 1” cubes)
 1 cup pineapple (fresh or frozen, cut into 1” cubes)
 ½ cup carrot (sliced)
 1 ½ cups soy milk (plain, unsweetened)
Top
 ½ cup beet (cut into 1” cubes)
 1 cup pomegranate arils
 ½ cup blood orange (or regular orange, sectioned then sliced into 1” pieces, seeds removed)
 2 tbsp hemp seeds (hulled)

Directions

Make the base: Add the mango, pineapple, carrot, and ¾ cup of the soy milk to a blender. Blend until smooth. Pour into two separate glasses.

Make the top: Add the beet, pomegranate, blood orange, hemp seeds, and remaining ¾ cup milk to a blender. Blend until smooth.

Pour the beet mixture over top of the mango mixture. Drink as is or stir to create a beautiful orange and purple smoothie — just like a dreamy sunrise!

Chef's Notes

Substitutions
Instead of pomegranate arils, use organic raspberries, blueberries, blackberries or strawberries.

Substitute any type of orange for blood orange like Cara Cara, navel or Valencia (just remove seeds before blending).

Prep Ahead
If using fresh pomegranate, remove arils ahead of time and store in an airtight container in the refrigerator for up to 2 days before making this smoothie.

Storage
Store leftovers in an airtight container or mason jar for up to 3 days.
