Brussels Sprouts and Pear Slaw with Turmeric Tahini Dressing

Summary

Brussels sprouts may not be everyone’s favorite, so we encourage you to try them in a variety of ways. Simply changing the way they’re cut or cooked can turn you from a loather to a lover. When Brussels sprouts are shaved into a slaw then combined with sweet pear, they’re especially delicious. Enjoy this slaw by itself, on top of veggie burgers, or in grain bowls.

Ingredients

Slaw
 1 cup pear, cored and shaved (see Chef’s Notes)
 4 cups Brussels sprouts, shaved (about ½ pound)
 1 cup purple cabbage, shaved
Turmeric Tahini Dressing
 1 ½ tbsp tahini
 1 ½ tsp dijon mustard
 1 ½ tbsp organic apple cider vinegar
 1 tbsp maple syrup (or date paste, link in Chef’s Notes)
 1 tsp ground turmeric
 1 tbsp water (+1 tbsp as desired)
 salt (optional) to taste
 pepper (optional) to taste
 red pepper flakes (optional) to taste

Directions

Add the slaw ingredients to a large bowl and mix well.

In a small bowl add the dressing ingredients and mix well. Alternatively, you could add them to a mason jar, tighten the lid and shake!

Pour the dressing over the slaw and mix well.

Add salt, pepper, and red pepper flakes, if desired, to taste.

Chef's Notes

Substitutions
In place of pear, use apple.

Instead of cabbage, try red bell pepper or jicama.

Type of pear
You can use Bartlett, Anjou, Bosc or any pear you love. It’s important that it’s ripe but firm and not too mushy.

Sugar-free
Use date paste in place of maple syrup.

Prep Ahead
Prepare the dressing ahead of time and store in an airtight container in the refrigerator for up to 7 days.

Storage
Store leftovers in an airtight container in the refrigerator for up to 5 days.
