In a medium-size bowl, add the chia seeds, plant-based milk, cacao powder, and maple syrup (or date paste). Whisk together until all ingredients are combined.
Leave the mixture in the bowl for 15 minutes without stirring for the chia seeds to gel. After 15 minutes, whisk it together one more time.
Cover the bowl and place it in the refrigerator for four hours or overnight.
Remove the chocolate chia seed pudding from the refrigerator, divide half of the pudding between two serving bowls. This will make your bottom layer.
Add 1–2 tablespoons of chopped cherries on top of each serving bowl with pudding.
Divide the remaining pudding between the two bowls.
Top with another 1–2 tablespoons of cherries.
Top with dark chocolate shavings, if desired.
Chef's Notes
Substitutions
For the cherries, use whichever you prefer, sweet or tart. They’re both nutritionally dense, it just depends on your preference.
Sugar-free
Use date paste in place of maple syrup.
Storage
Store leftovers in an airtight container in the refrigerator for up to 5 days.
