Summary

Keeping a good condiment on hand at all times can make good food even better. This creamy “sour cream” is extra good because it’s made with silken tofu instead of dairy. It also goes with a variety of dishes — top it on veggie burgers, dollop it in tacos, or use it as a dip for veggies.

Ingredients

 8 oz organic tofu (silken)
 ½ tsp onion powder
 2 tbsp lemon juice (freshly squeezed)
 ¼ tsp salt (optional)
 ¼ cup fresh chives (minced)

Directions

Blend the tofu, onion powder, lemon juice and salt, if using, in a food processor or blender.

Transfer the mixture to a small bowl.

Stir in the chives. Taste for additional flavor of choice.

Chef's Notes

Substitutions
Instead of silken tofu use firm tofu. You may have to add 1–2 tablespoons of water to create the same consistency you would get with silken tofu.

Instead of chives use sliced green onion.

Add more flavor
Add a few dashes of smoked paprika for a smoky flavor.

Add minced fresh dill along with the chives.

Add more chopped fresh herbs like parsley or cilantro.

Storage
Store in an airtight container in the refrigerator for up to 5 days or freeze for up to two weeks.
