Ingredients
2 cups avocado (very ripe)
4 tbsp organic cacao powder (fair trade or rainforest alliance-certified)
4 tbsp almond butter (unsalted)
1 cup date paste (recipe link in chef’s notes)
1 tbsp vanilla extract (preferably alcohol-free)
1 pinch salt (optional)
2 tbsp pumpkin seeds (raw, unsalted)
Directions
1 Place all ingredients, except the pumpkin seeds, in a blender.
2 Blend until all avocado is completely blended and creamy.
3 Taste for more chocolate, almond butter, date paste, or vanilla extract.
4 In a small grinder, grind the pumpkin seeds until course.
5 Scoop the chocolate avocado mousse into your favorite bowl and sprinkle with coarsely ground pumpkin seeds.

Layer it up After blending mix in berries or bananas. Sprinkle hemp, chia, or flax seeds on top. Mix in some crushed nuts or seeds. Add on top of a fruit smoothie bowl. Enjoy as a mousse dip for strawberries.
