Ingredients
4organic apples, medium (cored and cut into ¼” slices via a mandoline or manually with a knife)
4tbspmaple syrup (or date paste, link in Chef’s Notes)
2tbsplemon juice (freshly squeezed)
2tspground cinnamon
⅛tspnutmeg
⅛tspsalt (optional)
Directions

Preheat the oven to 350 degrees F.

Add the apple slices, maple, lemon juice, cinnamon, nutmeg and salt, if using, to a large mixing bowl. Carefully stir to fully coat the apples.

Transfer the mixture into a 9”x9” or similarly sized baking dish and spread the apples out evenly (you may have to layer some slices). Scrape any liquid that has collected in the bottom of the bowl and pour over the top of the apples.

Bake the apples for 25 minutes, until fork-tender but not completely mushy, tossing halfway through.

Serve hot and enjoy by itself or with toasted oats, warm oatmeal or plant-based yogurt.
Chef's Notes
Substitutions Use pears instead of apples.
Sugar-free In place of maple syrup use date paste.
