Add the cucumber, lime and mint to a cocktail shaker (or large cup or glass similar to a cocktail shaker) and muddle.
Add 2 cups of ice to the shaker as well as the ginger beer.
Stir well with a cocktail stirring spoon or place a lid and cap over the shaker and shake well to combine and chill the beverage.
Fill two cocktail glasses with ice.
Strain the ginger beer mocktail beverage over a fine mesh strainer or cocktail strainer into the two glasses. Garnish each with a lime slice and mint leaf.
