These slightly sweet, no-bake treats are even more nutritious thanks to the addition of green powder. Green Bliss Energy Balls are an excellent plant-based snack for picky eaters of all sizes. If you are worried about the taste, have no fear. Creamy peanut butter and coconut shine through and disguise the leafy green flavor. For those with nut allergies, substitute sunflower butter for the peanut butter (they are just as scrumptious). Enjoy these as a snack or a grab-n-go green breakfast!

Ingredients

 6 dates (pitted)
 ½ cup organic rolled oats
 ¼ cup hemp seeds (hulled)
 2 tbsp peanut butter (plus more as needed, See Chef’s Notes)
 2 tsp greens powder (of your choice, see Chef’s Notes)
 1 pinch salt (optional)
 2 tbsp shredded coconut (unsweetened)

Directions

Add the dates, oats, hemp seeds, peanut butter, and green powder to a food processor. Blend until mostly smooth. A simple test: Pinch a piece with your index finger and thumb. If it sticks together it’s ready to roll! See Chef’s Notes below for a note about the amount of peanut butter to add.

Place the shredded coconut into a small bowl.

Spoon about one tablespoon of the mixture into the palm of your hand and roll into a ball.

Roll the ball in the coconut.

Place on a plate or cookie sheet and refrigerate for an hour before serving.

Chef's Notes

Substitutions
Subsititue hemp seeds with chia seeds.

Green Powder Options
Use any green powder (spirulina, matcha, chlorella, or a blend of greens!) you love to make the Green Bliss Energy Bites.

Nut-Free
Substitute peanut butter for sunflower seed butter.

Peanut Butter
The consistency of natural peanut butter can vary across brands or if you make your own. If your peanut butter is on the drier side, you may need to add 1–2 tablespoons more of peanut butter to reach the desired consistency (moist enough to form a ball and stick together).

Additional Ingredients
For an added crunch and chocolate flavor add a tablespoon of cacao nibs to the batter.

Storage
Store in an airtight container in the refrigerator for up to one week or in the freezer for up to one month.
