Green Goodness Sandwich

Summary

Another color associated with lots of mind-supporting nutrients is green. Think dark leafy greens, colorful cruciferous vegetables, and bright green avocados. Layering all the greens into one delicious sandwich not only makes for one heck of a tasty lunch but also an incredibly nutrient-dense meal to help you power through your day both mentally and physically.

Ingredients

 4 slices of organic whole-grain bread (or organic leaf lettuce)
 4 tbsp Turmeric Tahini Sauce or hummus (link in directions)
 ½ cup organic baby spinach (or chopped organic spinach)
 6 slices of cucumber (unwaxed, sliced, skin on)
 4 slices of organic tomato
 1 large avocado (pitted, scooped, and mashed)
 ½ cup broccoli sprouts (or other sprouts of choice)
 ½ cup Pickled Onions (link in directions)
 2 tbsp sunflower seeds
 2 dashes oregano
 2 dashes black pepper (optional)

Directions

Toast the four slices of bread in a toaster or toaster oven. Once done toasting, place two slices of bread on each of two dishes, getting ready to prepare your sandwich.

Spread one tablespoon of the Turmeric Tahini Sauce or hummus on each of the four slices of bread.

Divide the spinach, cucumber, tomato, avocado, and sprouts between two slices of bread, in that order so they can layer easily.

Top with 1–2 forkfuls of pickled onion on each layered bread.

On the other two slices of bread, without the layered vegetables, sprinkle one tablespoon of sunflower seeds on top of the tahini sauce on each slice of bread. Make sure the sunflower seeds stick to the sauce so they don’t fall out of your sandwich when you’re trying to eat it!

Place each unlayered slice of bread on top of each layered slice of bread. Cut your Green Goodness Sandwich in half and enjoy!

Substitutions
Any greens go here! If you have kale, arugula, endive, mustard greens or any other greens you prefer to use then use them!

You can use broccoli sprouts or any other sprouts you prefer.

Instead of the Turmeric Tahini Sauce, use another sauce of your choice. Examples include anything creamy from cashews or tahini, tapenade, hummus, or other bean spread.

If you don’t want to make the pickled onions, use sliced raw red onion.

Instead of pickled red onion use kimchi or sauerkraut.

Prep ahead
If you’re using a sauce or spread, make them ahead. Make the Turmeric Tahini Sauce ahead and store in an airtight container in the refrigerator for 7 days.

Make the pickled onion ahead and store it in an airtight container in the refrigerator for 14 days.

Flour-free
Use collards or organic leaf lettuce to wrap everything up.

Add more plant-powered protein
Add grilled tofu or tempeh to the sandwich for more protein.
