Blended with spinach, cilantro, optional jalapeño, garlic, and lime, this vibrant tahini sauce is the perfect accompaniment to a hearty grain bowl, the creamy drizzle over top of falafel, or a dipping sauce for your favorite raw veggies.

Ingredients

 ¼ cup tahini
 2 tbsp jalapeño (optional; seeded and roughly minced)
 ¼ cup cilantro (optional; roughly chopped)
 1 cup spinach (roughly chopped)
 2 small garlic cloves
 3 tbsp lime juice (freshly squeezed)
 ¼ cup water (plus 1 - 2 tablespoons more as needed)
 1 pinch salt (optional)

Directions

Add all ingredients into a blender and blend until smooth.

Taste for additional ingredients of choice. Personally, we loved it as is and didn’t think it was bitter or that the greens could be detected, but bitter supertasters might need more garlic or a touch more lime to cut the bitterness of the greens and tahini. The pinch of salt helps to mask some bitterness as well.

Pour green tahini sauce over top of a rice bowl or salad, or add to a hummus and veggie wrap!

Chef's Notes

Substitutions
Substitute tahini with plant-based yogurt, avocado, or silken tofu.

Substitute spinach with baby kale or arugula.

Substitute lime juice with lemon juice or apple cider vinegar.

Use green or red bell pepper in place of jalapeño if you prefer no spice.

Instead of cilantro, use parsley.

Storage
Store Green Tahini Sauce in an airtight container in the refrigerator for up to 7 days.
