Summary

This light vinaigrette is perfect for summertime salads when you want to keep it simple and clean, and it also pairs nicely with hardy winter vegetables with its bright lemon and shallot flavors. What’s more, it only takes minutes to make! We suggest doubling the recipe so you have extra to use throughout the week.

Ingredients

 1 garlic clove (fresh)
 ¼ cup shallots (fresh, chopped)
 ¼ cup lemon (juice)
 1 tbsp balsamic vinegar
 1 tbsp sherry vinegar (or red wine vinegar)
 ¼ cup date paste (link in chef’s notes)
 2 tbsp tahini
 ¼ tsp salt (optional)
 ¼ tsp pepper (optional)

Directions

Add all ingredients to a food processor or blender. Blend until smooth.

Taste and adjust the ingredients to your liking (more lemon for acid, more date paste for sweetness, or more tahini for creaminess).
