Summary

This creamy Lime Vinaigrette will elevate lots of dishes you create from your plant-powered garden. Drizzle it on steamed vegetables, use it as a raw veggie dip, add it to sandwiches and wraps, or dress your grain and veggie bowl with it. It’s simple to make (takes only 5 minutes!), yet it’s bursting with flavor and nutrition thanks to the tahini, garlic, and lime.

lime vinaigrette

Ingredients

 ¼ cup tahini
 ¼ cup lime juice (freshly squeezed)
 1 small garlic clove
 1 tbsp dijon mustard (or brown mustard)
 1 tbsp maple syrup or date paste, link in Chef’s notes
 ¼ tsp salt (optional)
  tsp pepper (optional)
 water, as needed

Directions

Add all ingredients to a blender or food processor and blend until creamy and smooth.

Add 1–2 tablespoons of water at a time to reach the desired consistency. (The amount of water added will depend on the consistency of your tahini.)

Taste for additional ingredients of choice such as tahini for creaminess and nutty flavor, lime juice for tart, or Dijon for tang.

Chef's Notes

Substitutions
Instead of tahini, use sunflower butter or plant-based yogurt for the creamy base.

Substitute lemon juice for lime juice.

Substitute ⅛–¼ teaspoon of garlic powder for the garlic clove.

Whole food sweetener
Use date paste in place of maple syrup.

Storage
Store leftovers in the refrigerator in an airtight container or mason jar for 7–10 days.
