Summary

An adaptation of the popular Indian beverage, this Mango Lassi is made with plant-based milk instead of dairy and includes a bit of lime juice to brighten the flavor. Enjoy it as is or have fun creating refreshing popsicles out of the blend!

Ingredients

 1 cup mango chunks (fresh or frozen)
 1 cup plant-based milk (unsweetened, plain or vanilla)
 4 tsp lime juice (+2 tsp as desired, freshly squeezed)
  cup ice cubes (for blending)
 1 tsp maple syrup (optional, or date syrup [see Chef’s Notes], +1 tsp as desired)
 ice cubes (for serving)

Directions

To a blender, add mango, milk, lime juice (starting with 4 tsp), and ice cubes and blend until smooth.

Taste test, and add more lime juice or the date syrup if desired.

Pour into individual glasses with a few ice cubes and serve.

Chef's Notes

Date Syrup
Thin out homemade date paste with just enough water until you achieve your desired consistency. Easy peasy!

Idea
For a twist, add a handful of frozen or fresh organic raspberries or strawberries to the blend.

Extras?
Pour leftovers into popsicle molds and freeze for “Sass-icles”!

Storage
Store leftovers in an airtight container or mason jar for up to 2 days. You may need to add more plant-based milk or water for desired consistency.
