Ocean’s Savory Oatmeal

Ingredients

Instant Pot Ingredients
 1 cup organic rolled oats (dry, or steel cut oats)
 1 cup plant-based milk (unsweetened)
 1 cup water
 ½ cup medium yellow onion (diced)
 3 medium garlic cloves (diced)
 1 tbsp organic tamari (reduced-sodium, or coconut aminos)
 1 tsp ground turmeric
 1 tsp ground cumin
 1 pinch cayenne (optional) +1 pinch as needed
 1 handful organic kale (stems removed, leaves chopped)
Toppings
 2 tbsp flax seeds (freshly ground, or flax meal)
 2 tbsp chia seeds (ground)
 2 tbsp nutritional yeast
 2 tbsp pumpkin seeds (crushed, or sunflower seeds)
 2 tbsp hemp seeds (hulled)

Directions

Add all Instant Pot ingredients to the Instant Pot. Stir.

Put the lid on your Instant Pot and turn the valve to “Sealed.”

Set to manually cook for 6 minutes on low pressure. It will take about 5–8 minutes to come to pressure before it starts cooking.

Once finished cooking, allow the pressure to release naturally for at least 10 minutes, then carefully release any remaining pressure.

After making sure all pressure is released, carefully remove the lid (away from you since it’ll be hot under there!), and stir the oatmeal.

Divide the oatmeal between two serving bowls and add a tablespoon of each topping: ground flax, ground chia, nutritional yeast, pumpkin seeds, and hemp seeds.

Chef's Notes

Substitutions
Instead of yellow onions use red or white onions or scallions.
In place of kale, use another leafy green of choice.

Swap out any of the toppings above with sunflower seeds or your favorite nuts or seeds.

Pot in Pot Method for Smaller Serving Size
If you’d like to cut this recipe in half for only one serving, you’ll need to add a stainless steel pot that fits in the Instant Pot stainless steel pot. Add 1 cup of water to the Instant Pot stainless steel pot plus a trivet, then drop the second pot on top of the trivet before proceeding with the directions above (adding ingredients to the inside pot).

Stovetop Method
Add the milk, water, onion, garlic, and tamari to a medium stovetop pot and bring to a boil. Once boiling, turn down the heat to a simmer and add the oats, turmeric, cumin, and cayenne, if using. Simmer until oatmeal is the desired consistency and liquid is absorbed, about 5 minutes. Remove from heat and stir in the kale. Divide the oatmeal between two bowls and add the toppings.

Prep Ahead
Prepare your ingredients in the Instant Pot the night before. Set the timer to “Delay Start” and start cooking 15 minutes before you’re ready to eat your oatmeal in the morning.

Storage
Store leftovers in an airtight container in the refrigerator for up to three days.
