Add all of the ingredients except the cacao nibs (or dark chocolate) to a food processor.
Blend until creamy. It may take several rounds of blending to blend the dates. In fact, you may still have whole small pieces of dates in the nice cream and that’s okay if you like a little texture. If you prefer that it’s super creamy then keep blending!
Once it’s creamy, transfer to a freezer-safe bowl or container and stir in the cacao nibs or dark chocolate chips.
Freeze for 1–2 hours until chilled but not frozen solid.
Chef's Notes
Substitutions
If you like your nice cream super smooth, use 3–4 tablespoons of date paste in place of whole dates.
Instead of adding cacao nibs or dark chocolate chips, add your favorite nuts, seeds, or frozen fruit.
Sweetness
Depending on your sweet preference, you may want to add only two dates. We suggest starting with two and adding one or two more if you want it sweeter (taste test!). Or, you could omit the dates altogether as the banana adds its own sweetness.
Nut-free
Use tahini or sunflower butter in place of peanut butter.
Companion Recipes

Storage
Store leftovers in the refrigerator in an airtight container for up to 5 days. Freeze one hour before serving.
